Fluffy Pancake Tower

Serves: 8
Ingredients
  • 2 Cups (10oz/280g) all - purpose flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 3 Tbsp white sugar
  • 1 tsp kosher salt
  • 2 Whole Eggs
  • 2 Cups (454floz/ ½ litre)Buttermilk
  • 1 tsp vanilla extract
  • 4 Tbsp Melted butter
Instructions
  1. First, melt the butter and set aside to cool.
  2. Mix together the dry ingredients in a large bowl.
  3. In a jug, whisk together the buttermilk, egg and vanilla essence
  4. Add the liquid to the dry mix and starting lightly mixing together. The secret to thick, fluffy pancakes is not to over mix. My trick is to stir it enough times to spell P.A.N.C.A.K.E, and then stop.
  5. Slowly drizzle in the cooled butter and stir another 3 times. Lumps are ok, resist the urge to mix more
  6. Put in the fridge for 10 minutes. This helps the butter to chill and bubbles to form in your batter.
  7. Put a heavy bottom frying pan or griddle on medium heat-low heat.
  8. Spoon one big spoon of the batter per pancake.
  9. Cook for 4 minutes on one side. It is time to turn them over when you see bubbles forming on the top of the pancake and the edges turn color (forming bubbles on top is really important because they hold your pancake up and keep it thick, i call them pancake pillars :))
  10. Flip and cook for another on the other side a little longer, until brown. Enjoy with butter and maple syrup.

Salted egg yolk spaghetti


For 2 pax

2 salted egg, steamed
1/2 of  spaghetti/linguine
1/2 onions, sliced thinly
3 cloves of garlic, minced
2 teaspoons of Chinese style dry. sambal
1/2 cup of full cream milk
4 tbspoons of butter
1 handful of Thai basil
1 chilli padi, sliced

1 deboned chicken thigh, marinate with shaoxing wine with a bit of salt.  Coats with AP flour right before frying with butter + peanut oil.






Cook spaghetti according to the instructions on packaging. Only add salt in the water! And move spaghetti around to prevent it sticking together. At the same time, starts frying the chicken thigh. Skin side down first.

By using the same frying pan, sautéed the onions until slightly translucent. Add in minced garlic. Then add steamed crumbled salted egg yolk.

Sautéed it until it bubbles.

Pour in the milk and Chinese sambal and let it bubbles.

Throw in the spaghetti and allow  liquid to cook down a little. If it's too thick, add some pasta water to dilute it.

Sliced up the chicken thigh , crumble up the egg white and  you are already to serve!

Churros Coated With Cinnamon Sugar




Ingredients

A
2/3 cups + 2 tbspoons of all purpose flour
1 teaspoon of baking powder
1 tbspoon of olive oil
1 cup of just boiled water

B
1/4 cup of white sugar
2 teaspoons or more of cinnamon powder

1) Mix the flour and baking powder.
2) Add in olive oil.
3) Add in water and mix at the same time until you get a warm and sticky dough.
4) Let it rest for about 10minutes and heat up 2-3 cups of vegetable oil for deep frying purpose.
5) Mix ingredient B well and set aside
6) Heat the oil in a smallish saucepan. It should come up about a third up the sides of the pan.
7) When you think it's hot enough, get a small piece of dough and drop it in.
8) It should take about 1 minute to be golden brown.
(9) Fill the dough in a pipping pan with a large star shaped nozzle.
(10) Squeeze approximate 3 inches of dough into the hot oil snipping them off by using a pair of scissors.
11)  Let them out once they turn in a rich golden brown colour put it on a bowl lined with paper towel to absorb extra oil and allow them to sit for 5-10 minutes to allow them to set inside.
12) Toss them in cinnamon sugar and you are ready to serve!

I just melt some chocolate truffle I have at home for the chocolate dip! You could just serve it with Nutella, which it's more delicious in my opinion. Hehe One can never have enough of Nutella. Am I right?

How To Get Your Kids To Eat Their Carrots Part 1

Sorry for the late post! I hope you guys would enjoy this simple recipe  :)

So first up, my Mirin Glazed Carrots which only calls for 5 ingredients! 

Ingredients: 

2 Carrot, sliced longitudinally 
2-3 Tb spoons of Water 
3-4 Tb spoons of Mirin 
1 Teaspoon of Minced Garlic 
1 Teaspoon of Oil

Method:
(1) Heat up the pan and add in 1 teaspoon of oil. 
(2) Toss in the carrot and cook for about 1-2 minutes with medium heat until it slightly soften 
(3) Pour in Mirin and toss the carrots around on high heat for a minute, then put the lid on to cook for 2-3 minutes or until it's soften. 
You may add on a few tb spoons of water if it seems to be dry and carrots still remained uncooked.
(4) Remove the lid and switch to high heat to reduce the liquid. 
(5) Turn off the heat when carrots are all glazed. 
(6) Toss in the minced garlic and mix well. 
Voila,you are ready to serve! 

This serves as a good side for steaks or roast chicken. You can also double up the portion and keep the extras for salad or sandwiches. It keeps well in fridge for a week.

Tuna Wrap


This recipe serves 4 pax.

Ingredients

Tuna Salad
(A)
1 can of tuna
1/2 red onion, cubed
1 small handful of dill, chopped
1 hard boiled egg, boiled (optional)
2-3 tbspoons of mayonnaise
1-2 teaspoon of lemon zest
2-3 teaspoon of lemon juice

(B)
1 fresh corn /100grams of frozen corn
1 tbspoon of butter
1 teaspoon of thyme
Salt & Pepper to taste

(C)
1/2 box of mushrooms,cubed
2 teaspoons of mirin
2 teaspoons of shao xing wine
1 teaspoon of thyme


Salt & Pepper to taste

1 Avocado, sliced and squeeze some lemon juice on top to keep it green.

4 Pieces of wraps

Salsa
1 tomato, cubed
1 teaspoon of garlic, minced
1 teaspoon of shallot/onion, chopped
1 handful of cilantro, chopped
1 lemon, for its juice
Salt & Pepper to taste


For tuna salad,
(1) Mix (B) together and microwave for 2-3 minutes. If you are using fresh corn it would take a longer time to get cook through.
(2) Heat up a pan on medium heat, put the mushrooms in and sauté for 3-4 minutes until it slightly reduced in size. Add in the remaining (C)  ingredients and mix well.
(3) Take a big bowl, add (A) (B) and (C) mix well and aside for at an hour for the flavours to merge.

For salsa,
Just mix everything together and set aside for at least 15 minutes.

To assemble,
Just heat up the wraps on a frying pan and wrap it with tuna salad, salsa and sliced avocado! And you may serve it with a simple salad dress with vinaigrette on the side.

Voila you are done :)

Tips
You can always substitute tuna with cooked chicken breast, cubed and I would recommend to top it with a drizzle of maple syrup.

Egg Benedict Recipe adapted from masterchef au


This recipe serves 4 pax. Ingredients 250g of Smoked Salmon 8 Eggs for poaching 1 Loaf white bread/4 english muffins 300grams of Chinese baby spinach, only leaf part is needed 1 Packet of Button mushrooms, sliced/cubed1 Tbspoon of sliced shallot 2 Teaspoons of minced garlic1 Tbspoon of Mirin 1 Tbspoon of Shaoxing Wine1 Tbspoon of Oyster Sauce1 Tbspoon of Thyme Salt & Pepper to taste
Ingredients of Hollandaise Sauce 150grams of unsalted clarified butter 2 Shallots, finely chopped 1 1/2 cups of white wine (I omitted this and it tastes fine to me.) 1 cup of white wine vinegar 1 Bay leaf 4 Black Peppercorns 3 Egg Yolks 2 tbspoons of finely chopped dill Salt & Pepper to taste 2 teaspoons of Worcestershire sauce 
Hollandaise Sauce (1) Melt butter in a small bowel by using microwave for around 5 minutes. Allow the whey and solids to settle, then ladle off the clear melted, clarified butter. Discard whey, and allow clarified butter to cool.(2) Place shallots, wine(optional, or 1/2 wine 1/2 chicken stock would be a good substitution), vinegar, bay leaf and peppercorns in a saucepan set over high heat, and reduce by two thirds. Remove pan from heat and allow to cool, then transfer mixture to a heatproof bowl.(3) Add yolks and 1 tablespoon of water to bowl, and whisk until foamy and paler in colour. (4) Meanwhile, place a saucepan of water over medium-low heat and bring to a simmer. Set bowl into pan, and continue whisking until the mixture forms a thick ribbon when you lift the whisk from the bowl, taking care not to scramble the sauce.(5) Slowly pour in butter in a thin, steady stream, whisking constantly. Strain through a fine sieve into a serving dish. Stir in dill and season to taste. Set aside and keep warm. 
To serve, (1) Bring a saucepan of water up to a rolling boil. Add vinegar and a pinch of salt. Poach eggs for about 3 minutes until whites are set and yolks are soft.(2) Coat the bread/muffins with olive oil/butter and toast until its crispy on the outside. (3) Pour 1 tbspoon of olive oil in a frying pan over medium heat. Add spinach and oyster sauce, mix well and put the lid on for about 2 minutes until wilted, stir in minced garlic and shallots. Season with salt and pepper. (4) Put cubed mushrooms into a frying pan without oil and cook for about 3-4 minutes or until it slightly reduced in size. Add in 1 teaspoon of oil, thyme and minced garlic mix well. Add mirin and shaoxing wine and allow it to reduced. (5) To assemble just put toasted bread on a plate followed by sauteed spinach, mushrooms, smoked salmon last but not least the sinful hollandaise sauce. 
Voila you are done! Btw I chose to use chinese baby spinach cause it's so much cheaper than imported baby spinach and it tastes the same! I guarantee you would be able to tell the difference ;)Besides, if you are into cooking at the moment i would recommend you to get a bottle of mirin and shao xing wine each. For me, mirin is absolutely essential for mushrooms and seafood. It absolutely elevates the flavor to the next level. Alrighty! Chocolate Chip Cookie Recipe 🍪




150 gram of unsalted butter 
80 gram of brown sugar 
80 gram of castor sugar 

1 whole egg 
1 teaspoon of vanilla extract 

225 gram of all purpose flour 
1 teaspoon of baking powder 
1/4 teaspoon of salt 

200 gram of good quality chocolate chips 

(1) Beat ingredient A untold it's fluffy and paler. 
(2) Add ingredient B beat until mix. 
(3) Sift ingredient C and add ingredient C into the mixture, beat until all combined. 
(4) Add D mix until all combined. 
(5) Use ice cream scoop for even distribution. 
(6) Slightly press down the batter. 
(7) Bake at 150c for 10-15 minutes. 

Tadaah, you are done! Now you can have chocolate chip cookie with a cup of milk ☺️

LaLa Fried BiHun


LaLa Fried BiHun


Ingredients

1 Red onion, thinly sliced
1 Handful of Thai Basil
1 Red Chili cut into half/sliced
3 Cloves of garlic, chopped
150g of Sliced pork belly marinated with shao xing wine, soy sauce, pepper, and corn flour
100g of Fu Zhok Fish Cake
200g of Steamed LaLa
1 packet of Bihun, soaked until it's soften takes around 15-20 minutes
3 tb spoons of Cooking oil
2-3 tbspoons of Soy sauce
2-3 tbspoons of Dark soy sauce
2-3 tbspoons of  Oyster sauce
1-2 cups of chicken stock/water

Garnish
4-5 tbspoons of chopped scallions
1 Red chili, sliced
1 Lime, cut into wedges

(1) Pan fried the sliced pork and fish cake until it's crispy! Set aside.
(2) Heat up the wok until it's sizzling hot before pouring 3 tb spoons of oil.
(3) Put sliced onions into the wok and fried until it's half translucent, add in chopped dry shrimp, fry until you smell it's aroma.
(4) Add in garlic, chili and Thai basil fry until you could smell it's fantastic aroma, add in steamed lala.
(5) Continue frying for  around 5 minutes before adding in the Bihun.
(6) Toss the Bihun for 2-3 minutes to allow the merging of flavours.
(7) Add in the sauces, tb spoon by tb spoon and tastes as you go!
(8) Add some chicken stock if you think the Bihun it's too dry for your liking. I used about 150g of it.
(9) Now just topped it up with crispy pork belly and fish cakes and you are done 👍 Om nom nom

Always remember to pour soy sauce at the side of the wok, heat helps in enhancing the flavor.

My signature brownies recipe







My Signature Brownies 

Ingredients:
250g of melted unsalted butter
2 cups of caster sugar
90g of good quality cocoa powder
1 cup of plain flour, sifted
1 teaspoon of baking powder
5 eggs (room temperature)
1 cup of chopped dark chocolate

Optional: 1 cup of nuts

Steps: 
(1) Preheat oven to 165 degree celcius.
(2) Line a square baking tin (20cm x 20cm) with baking paper
(3)Add the melted butter and sugar into an electric mixer and mix on medium speed until combined.
(4)Sprinkle in cocoa powder and mix until combined and has a gooey consistency.
(5)Add 1 egg at a time.
(6)Rain in the flour and baking powder and mix.
(7)Stir through chopped chocolate and nuts.
(8)Bake for around 20 minutes or until the sides are firm but soft in the middle.
(9) Serve with chocolate sauce and vanilla ice cream. Woila :)


Chocolate sauce

Ingredients:
150ml of water
2 tablespoons of caster sugar
200g of 70% dark chocolate chopped

Steps:
(1)Place sugar and water in sauce pan over medium heat and cook until sugar dissolves.
(2)Add in chocolate, leave for 10-20seconds then stir until everything melts.

Recipe for easy pizza and guilt free onion rings

Made cheat pizzas lately and oven baked guilt free onion rings!  Inspired by hungry girl :) absolutely love her tv program. Easy recipes for eating clean.



Here comes the recipes

Burger pizza
1. Pan fry the burger patty (I made my own burger patty.and cut into chunks
2. Pre toast your tortilla to get that extra crunch!
3. Spread some ketchup and guacamole on the tortilla
4. Evenly distribute chopped garlic, sliced onions/shallots and spice of your choice (I usually use thyme) *you can omit this step if you have store brought marinara/pizza sauce in hand
6. Evenly distribute some mozzarella cheese, chopped garlic, slice onions/shallots, sliced tomatoes and burger patty
7. Top it up with some mozzarella and cream cheese
8. Put it into oven (180-200degrees) for a few minutes
9. Top it up with cucumber
10. Voila you are done!

Tips :
If you love runny egg yolk on your pizza just crack an egg onto the pizza when is almost done and baked it for a 2-3 minutes.
The variation for this recipe is endless!

I made a seafood pizza too! by using mentaiko mayo (you can get it in shojikiya) , tuna and crab sticks.


Onion rings
1. Cut a huge onion (red/yellow) into thin rings
2. Preheat your oven at 180-200degrees celcius
3. Prepare 3 bowls and put in corn starch, egg white , and bread crumbs individually
4. Season the corn starch, egg white and bread crumbs with a touch of salt and pepper
5. First coat the onion rings with corn starch then into egg wash and finally coat it with bread crumbs
6. Spray the baking pan with canola oil for easy removal
7. Arrange the onion rings in single layer
8. Spray some canola oil on the onion rings for crunch
9. Put it into the oven for approximately 5minutes (depends on the thickness of your onion rings)
10. Take it out to flip the onion rings and bake for another 3-4minutes
11. Now you are done! Enjoy your guilt free onion rings with some ketchup ;)

Tips : For variation you could put some dry herbs into the bread crumbs.

Classic thyme and lemon chicken


hi guys! It has been awhile since i last blog. I figure maybe i shall blog about my recipes since i have been quite passionate in cooking and baking lately. So, enjoy!


Classic Thyme and Lemon Chicken 

Salt 
Pepper 
Chicken
1 Large bunch of  fresh thyme 
1 Lemon, halved 
Olive oil


(1) Preheat the oven at 180 degree
(2) Pat the chicken dry
(3) Rub a generous amount of salt,pepper and  fresh thyme on the chicken. 
(4) Put the lemon and some sprigs of fresh thyme into the cavity
* For lemon to release maximum flavour, preboil it in boiling water for about 1 minute and poke it with a fork before inserting it into the cavity. 
(5) Rub a generous amount of olive oil (This is how you get crispy chicken skin!)
(6) Voila now you are done, just roast the chicken for around an hour or until the juices run clear when you        cut between the leg and thigh.


Tips: 
You could roast some vegetables together with the chicken i would suggest carrots, pumpkin, potatoes,       capsicum, onions and garlic (as a whole) toss it with some salt & pepper, olive oil, thyme with a touch of balsamic vinegar and honey.

Recipe for cinnamon apple muffins







Makes 12

Ingredients: 
2                  Apples 
1 3/4 cups    All purpose flour/whole meal flour 
2 teaspoons  Baking powder 
2 teaspoons  Ground cinnamon 
2/3 cup         Brown sugar and 4 teaspoons for sprinkling 
1/2 cup         Honey 
1/4 cup         Plain yogurt 
1/2 cup         Vegetable oil 
2                   Eggs 
1/2 cup         Raw almonds 

1) Preheat oven to 200degree Celsius. 

2) Peel and core the apples then chop into small dice (about 1/4inch) 

3) Measure flour, baking powder, and 1 teaspoon of ground cinnamon into a bowl. 

4) Whisk together 2/3cup brown sugar, honey, yogurt, vegetable oil and eggs in another bowl.

5) Chop the almonds roughly and add half of them into the flour mixture. 

6) Put another half of the chopped almonds  into a small bowl with 2nd teaspoon of cinnamon and 4 teaspoons of brown sugar. This will make the topping for the muffins. 

7) Now fold the wet ingredients into dry ingredients. Add the chopped apple, and stir to combine. NOT TO OVER MIX IT. 

8) Spoon the batter into paper cups, then sprinkle the topping over them. 

9) Pop them into the preheated oven and bake for 15 minutes depending on the size of your paper cups. The bigger it is the longer it takes. 

Tips: You can substitute 1/2 cup of yogurt with 1/4 cup of milk it will works just fine.

My new favourite chocolate cake recipe!







CAKE

  1. 1 3/4 cups all-purpose flour, plus more for dusting
  2. 2 cups sugar
  3. 3/4 cup unsweetened cocoa powder
  4. 2 teaspoons baking soda
  5. 1 teaspoon baking powder
  6. 1 teaspoon kosher salt
  7. 1 cup buttermilk
  8. 1/2 cup vegetable oil
  9. 2 large eggs
  10. 1 teaspoon pure vanilla extract
  11. 1 cup freshly brewed hot coffee

FROSTING

  1. 6 ounces semisweet chocolate, coarsely chopped
  2. 2 sticks (1/2 pound) unsalted butter, at room temperature
  3. 1 large egg yolk
  4. 1 teaspoon pure vanilla extract
  5. 1 cup plus 1 tablespoon confectioners' sugar, sifted
  6. 1 tablespoon instant coffee granules
  1. Preheat the oven to 180°. Butter two 8-inch round cake pans and line them with parchment paper; butter the paper. Dust the pans with flour, tapping out any excess.
  2. In the bowl of an electric mixer fitted with a paddle, mix the flour with the sugar, cocoa powder, baking soda, baking powder and salt at low speed. In a medium bowl, whisk the buttermilk with the oil, eggs and vanilla. Slowly beat the buttermilk mixture into the dry ingredients until just incorporated, then slowly beat in the hot coffee until fully incorporated.
  3. Pour the batter into the prepared pans. Bake for 35 minutes, or until a toothpick inserted in the center of each cake comes out clean. Let the cakes cool in the pans for 30 minutes, then invert the cakes onto a rack to cool completely. Peel off the parchment paper.
  4. In a microwave-safe bowl, heat the chocolate at high power in 30-second intervals, stirring, until most of the chocolate is melted. Stir until completely melted, then set aside to cool to room temperature.
  5. In the bowl of an electric mixer fitted with a paddle, beat the butter at medium speed until pale and fluffy. Add the egg yolk and vanilla and beat for 1 minute, scraping down the side of the bowl. At low speed, slowly beat in the confectioners' sugar, about 1 minute. In a small bowl, dissolve the instant coffee in 2 teaspoons of hot water. Slowly beat the coffee and the cooled chocolate into the butter mixture until just combined.
  6. Set a cake layer on a plate with the flat side facing up. Evenly spread one-third of the frosting over the cake to the edge. Top with the second cake layer, rounded side up. Spread the remaining frosting over the top and side of the cake. Refrigerate for at least 1 hour before slicing.
MAKE AHEAD The frosted cake can be refrigerated for 2 days. Let stand for 1 hour before serving.


Ps: Don't be worried of the very thin consistency of the batter! It             will work out just fine (:

Tips: You can always substitute butter milk by adding 2-3 tablespoons of lemon juice/vinegar into 1 cup of milk and let it sit for a few minutes until it thickens.

My baked pasta recipe







(1) Open a can of tomato puree. Mix it with half a can of olive oil, garlic, shallot, any herbs that you have, salt, sugar and half a can of water
(2) Pour in the uncooked pasta. No washing required.
(3) Slice up 3 to 4 tomatoes depending on the size of your baking dish.
(4) Line the baking dish with tomatoes slices (~1cm for thickness) and keep up some to put on top of the pasta.
(5) Pour in the pasta mixture. Cover the pasta with tomatoes.
#make sure you cover the whole thing with tomatoes. if not some will be dried up!
(6) Spray some olive oil on top of the tomatoes
(7) Put into the oven at 180 degree celcius for around 30-40 minutes
(8) Optional : put in some milk/cream then you'll have tomato cream pasta!
(9) Sprinkle some cheese before you eat! :D

Roasted Chicken Sandwich

How to make

(1) Chop the leftover roasted chicken or just tear it using your hands
(2) Chop up some tomatoes corns cilantro *with ze stem
(3) Add some mayonnaise salt pepper and MAPLE SYRUP!
(4) You can put some dry cranberries or just apply 1 layer or cranberries jam on your toasted bread.
(5) I used mozaarella and cheedar cheese for this!
(6) Leave it overnight for better flavour (:
(7) If you dont feel eating bread you can just add some macoroni and mix it!


Woila now you are done! (;

By far this is the best froyo in town!
It's so smooth and velvety! And not to mention very dense. Not too sour too. The best part? Ze signature house crumbs! Me gusta. It's crunch and cinnamon scented. <3 And i love how they distributed the crumbs evenly instead of just pouring it on the top. Besides, they have mini meringue for topping!

My hot choc recipe

My hot choc recipe (:


Just add some of your favourite mini chocolate bar into your usual milo drink!
Stir until everything dissolves.
If your milo aint hot enough just put it into the microwave for 1 and a half minute.
I used hershey mini milk chocolate bar for this!
If you dont have any chocolate bar around, few spoons of nutella would be good enough.
If is too thick for your liking just pour some milk to dilute it.
And add some marshmallows on top.
